Einkorn Kefir Apple Pancakes

This might sound bold, but I think these Einkorn Kefir Apple Pancakes are the best pancakes you’ve had in a long time. Light, fluffy plump, melt-in-your-mouth tender – they will certainly become your family’s favorite morning treat. On top of that, they are easy to cook and flip, and are made with ancient einkorn wheat flour and kefir that are gentle on your tummy, and leave you feeling pleasantly full but not weighed down. The apples give these pancakes a nice subtle sweetness, so no syrup is required. My favorite toppings are butter, sour cream and tart cranberry sauce.

HOW TO MAKE EINKORN KEFIR APPLE PANCAKES

Ingredients
1 egg, slightly beaten
3/4 cup kefir (how to make kefir, or buy unsweetened kind at stores in the yogurt section)
1 teaspoon vanilla extract
1.25 cups all-purpose einkorn flour or freshly ground einkorn berries (I buy Jovial einkorn)
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
2 tablespoons sugar
1 sweet apple, peeled and grated through a large grater
Ghee or coconut oil for greasing the pan (how to make ghee)

Equipment
1 medium mixing bowl
1 small mixing bowl
Mixing spoon
Grater
Frying pan
Measuring tablespoon

Instructions
Mix egg, kefir and vanilla in a medium mixing bowl.
In a small bowl, toss together flour, baking soda, salt and sugar; add to the wet ingredients.
Add grated apple, and allow to rest for 10 minutes. The batter will be a bit thicker than sour cream.
Preheat pan to medium-low temperature and grease the pan.
Using a tablespoon, scoop the batter on the preheated pan, and cook each side until golden and puffy. You should flip the first time when you notice that the uncooked side gets ‘filmy’ and no longer glistens; that way you won’t drip batter, and flipping will be a breeze.

This is the first recipe of yours I’ve tried and it was great! I have one picky eater that barely even took a bite before saying he didn’t like it but everyone else gobbled them up! Thanks so much for sharing – I’m encouraged to try more of yours. 🙂

My new favorite pancake recipe! Thank you for finally providing me with a pancake recipe that is the perfect consistency. They cook so well- nice and fluffy inside, but done without being burn on the outside :oD I used ghee to cook them and it worked great.
