This is not really a recipe, more of a nudge in the right direction. Toss some fresh garden herbs with sour cream in a blender, and your meal is transformed into a taste fest. Plus you get a boat load of all the wonderful nutrients from the herbs. I love this sauce with roasted vegetables, boiled potatoes, fish and even as a bread topping. I add different ingredients based on what I have on hand or what’s ready in the garden. In the spring I added ramps, right now I have a bunch of sorrel and garlic scapes, but the one constant is always dill and sour cream.
HOW TO MAKE HERB SAUCE
Ingredients
6-7 large sprigs of dill
2-3 parsley
5 stalks of chives or green onions
A squeeze of lemon or lime
1 small cucumber
1/4 cup sour cream
Salt and pepper to taste
A splash of water, if sour cream is too thick
Instructions
Toss all ingredients into a blender, process until smooth.
