Quick Russian Style Gazpacho

This soup is so simple to make that it’s hard to call it a recipe.We often make it on those hot summer days when nothing else sounds good. In Russia, folks often add kefir or plain kombucha to the cold soups. Yes, kefir goes great with pickle juice! It creates a creamy soup that’s amazingly refreshing. If you are not that adventurous – this soup is still one of the best things you can eat for your health, loaded with vitamins, enzymes, probiotics and fiber.

Quick Russian Style Gazpacho

Ingredients
  • 3 tomatoes
  • 2 small cucumbers
  • A handful of salad greens
  • 3-4 green onions
  • A couple of sprigs of fresh dill
  • 1 tablespoon grated horseradish
  • 1/4 cup [url href=”https://www.beetsandbones.com/lacto-fermented-cucumber-pickles/” target=”_blank” title=”Lacto Fermented Cucumber Pickles”]pickle[/url] juice or [url href=”https://www.beetsandbones.com/lacto-fermented-sauerkraut/” target=”_blank” title=”Lacto Fermented Sauerkraut”]sauerkraut[/url] juice (optional, if not using – salt to taste)
  • 1/4 cup [url href=”https://www.beetsandbones.com/make-kefir-and-why-you-should/” target=”_blank” title=”How to Make Kefir, and Why You Should”]kefir[/url] or plain kombucha
Instructions
  1. Throw all ingredients in a food processor or blender, and mix until smooth, serve and enjoy!
